Apple Bread

 

1 c. sugar

8 oz. sour cream

2 eggs

2 t. vanilla

1 c. chopped pecans, divided

2 c. flour

½ t. salt

½ t. baking soda

2 t. baking powder

1 ¼ c. tart apples, peeled and chopped

 

In a large bowl, beat together sugar, sour cream, eggs, and vanilla on low speed until combined.  Then beat on medium speed for 2 minutes.  Add dry ingredients to sour cream mixture, beat on low speed until combined.  Stir in apple and half of the pecans.  Turn into a greased 9x5x3 loaf pan.  Sprinkle with remaining pecans and press lightly into batter.  Bake at 350 degrees for 55-60 minutes. (Test with toothpick for doneness) Cool in pan on rack for 10 minutes.  In a small saucepan, combine ¼ c. butter or margarine, and ¼ c. brown sugar.  Cook and stir until mixture comes to a boil.  Reduce heat and boil gently for one minute.  Remove bread from pan and drizzle top with brown sugar mixture.
