Apple Fritters

 

These are wonderful!!!

 

1 egg, beaten

1 c. milk

1 c. apples, finely chopped, peeled and cored

¼ c. sugar

¼ t. salt

1 t. grated orange peel

3 T. orange juice

½ t. vanilla

2 c. flour

1 T. baking powder

oil for deep-frying

powdered sugar

 

In a mixing bowl, combine the beaten egg, milk, apples, sugar, salt, orange peel, juice and vanilla.  Stir the flour and baking powder together, then fold into the egg mixture, stirring just till all the flour is moistened.  Drop batter by rounded teaspoons into deep, hot oil (350 degrees) and fry until golden brown, about 3 minutes, turning once.  Drain thoroughly on paper towels.  Roll in powdered sugar.  Serve warm.  Makes about 3 ½ dozen.
