Corn Fritters

 

½ c. flour

½ c. yellow cornmeal

1 ½ t. baking powder

2 t. sugar

3 eggs, 2/3 c. milk

¼ c. margarine, melted

1 can (1-lb) corn, drained

3 green onion, chopped

 

Whisk eggs with milk, melted butter, corn and green onions.  Add dry ingredients.  Heat 2 T. oil in skillet over medium heat.  Drop by tablespoonfuls of fritter batter into hot oil, cook until golden.  1-2 minutes on each side.
