Orange Blossom Muffins

 

1-6oz can frozen orange juice concentrate, thawed

¼ c. sugar

2 T. oil

1 egg, slightly beaten

2 c. packaged biscuit mix

½ c. orange marmalade

½ c. chopped pecans

¼ c. sugar (additional)

1 ½ T. flour

½ t. cinnamon

¼ t. nutmeg

1 T. butter

 

Combine orange juice, ¼ c. sugar, oil and egg.  Add biscuit mix and beat well.  Stir in marmalade and pecans.  Grease muffin pans or use paper baking cups.  Fill each cup 2/3 full.  Combine  remaining sugar, flour, cinnamon and nutmeg, cut in butter until crumbly.  Sprinkle over batter.  Bake at 400 degrees for 20-25 minutes.  Makes 1 dozen.
