Pecan Pie Mini Muffins

 

1 c. packed brown sugar

½ c. flour

1 c. chopped pecans

2/3 c. butter, melted (no substitutions)

2 eggs, beaten

 

Combine sugar, flour and pecans.  In a separate bowl, combine butter and eggs and stir into flour mixture until moistened.  Fill mini pans 2/3 full and bake at 325 for 20-25 minutes. (make sure you spray pan with Pam)
