½ c. oil
2 eggs
1 c. pumpkin
1 2/3 c. flour
1 ¼ c. sugar
1 t. baking soda
½ t. cinnamon
½ t. nutmeg
¼ t. salt
½ c. chopped nuts
Combine oil, eggs, 1/3 cup water, and pumpkin. Gradually beat in dry ingredients. Stir in nuts. Pour into greased and floured 9x5x3 loaf pan or 20 muffin
cups. Bake loaf pan 350 degrees for one
hour. Bake muffins for about 20 minutes
or until toothpick inserted comes out clean.
