Toasted Walnut Bread

 

2 c. flour

1/3 c. sugar

1 T. baking powder

½ t. salt

1 egg, beaten

1 c. milk

1/3 c. oil

2 c. coarsely chopped walnuts, toasted

 

Grease the bottom and ½ inch up sides of an 8 x 4 x 2-inch loaf pan, set aside.  Preheat oven to 350 degrees.  In a large bowl stir together flour, sugar, baking powder, and salt.  Make a well in center of flour mixture, set aside.  In a medium bowl, combine the egg, milk, and oil.  Add egg mixture all at once to flour mixture.  Stir just until moistened (batter should be lumpy). Fold in nuts.  Spoon batter into prepared pan.  Bake for 50-55 minutes or until a wooden toothpick inserted near center comes out clean.  Cool in pan on a wire rack for 10 minutes.  Remove from pan.  Cool completely.  Preheat oven to 375 degrees.  Cut bread into ¾ inch slices.  Arrange slices in a single layer on a baking sheet.  Bake about 20 minutes or until browned on both sides, turning once.  Remove from oven.  Serve immediately with cheese slices, if desired.
