Cheesy Chicken and Rice
Dinner
1 T. oil
4 small chicken breast
halves
1 can (14 ½ oz) chicken
broth
2 c. Minute rice
2 c. broccoli flowerets,
fresh or frozen(thawed)
12 oz. Velveeta cheese,
cut up
Heat oil in large skillet
on med-high heat. Add chicken, cover and cook approx 4 minutes on each side or
until cooked through. Remove chicken
from skillet. Add broth to skillet,
stir. Bring to a boil. Stir in minute rice, broccoli and
velveeta. Top with chicken, cover. Cook on low heat 5 minutes. Carefully stir until velveeta is
melted.
