Chicken marinated with lemon, garlic, and basil

 

2 T. olive oil

1/3 c. fresh lemon juice

4 chicken breast halves on the bone, skin removed

1/3 c. coarsely chopped fresh basil

2 T. coarsely chopped garlic

¼ t. salt

ground pepper to taste

 

Whisk together the olive oil and lemon juice.  Put the chicken into a non aluminum bowl and pour the lemon oil over it.  Sprinkle with the basil and garlic.  Cover and refrigerate at least 2 hours.

Remove the chicken from the marinade and place in a large foil-lined baking pan.  Sprinkle with salt and pepper.  Bake in a preheated oven at 350 degrees 30-35 minutes.  Brush the chicken with the marinade after 15 minutes.  Discard remaining marinade.
