8 sheets(12x18each) foil
4 skinless, boneless chicken breasts (1-1 ΒΌ lbs)
dijon mustard
dried basil
paprika
2 medium carrots, cut into strips
2 cups mushroom
slices
2 medium zucchini, sliced
2 T. margarine
Preheat oven 450 degrees or preheat grill to medium high
heat. Center one chicken breast on each
double layer of foil. Spread mustard
over chicken, sprinkle with basil and paprika.
Top with vegetables, dot with margarine. Bring up sides of foil and double fold. Double fold ends to form a packet, leaving room for heat
circulation inside the packet. Repeat
to make four packets. Bake 20-24
minutes on a cookie sheet in oven OR grill 14-16 minutes in covered grill.
