Onion Roasted Chicken and Vegetables

 

1 envelope lipton onion soup mix

¼ c. olive oil

½ t. garlic powder

1 bone in chicken breast halves (about 2 pounds)

1 pound potatoes, cut into small chunks

2 carrots, sliced

 

Preheat oven to 450. In a large plastic bag or bowl, add all ingredients.  Close bag or toss in bowl, until chicken and vegetable are evenly coated.  In a 13 x 9 pan or raosting pan, arrange chicken breast side up, and vegetables.  Discard bag.  Bake uncovered, basting halfway through, 45 minutes or until chicken and vegetables are done.
