Roasted Garlic Chicken and Rice

 

1 c. converted rice, uncooked

4 stalks celery, sliced ¼” thick

1 small onion, chopped

2 heads of garlic, separated, unpeeled

2 c. chicken broth

1 ½ pounds boneless, skinless chicken breasts

1 t. poultry seasoning

1 t. salt

½ t. pepper

2 T. oil

 

Preheat oven 350 degrees.  Combine rice, celery, onion, garlic and chicken broth in a 2-3 quart oven proof baking dish.  Rub chicken with poultry seasoning, salt, pepper and oil.  Place on top of rice in baking dish.  Cover tightly with foil.  Bake for 1½ hours.  Do not open during cooking time.
