Butter Pecan Cookies

 

1 c. butter

½ c. brown sugar

1 egg

1 t. vanilla

1-3/4 c. flour

¾ c. powdered sugar

¼ t. soda

¼ t. salt

1 c. chopped pecans

 

Cream butter until light and fluffy. Add brown sugar and egg and beat well.  Add vanilla.  Stir in flour, powdered sugar, soda and salt.  Mix in pecans.  Drop onto cookie sheet 2 inches apart, and bake 375 degrees for 10-12 minutes, until lightly browned. Makes 2 dozen.
