Date Oatmeal Squares
¾ c. shortening
1c. brown sugar
1 ¾ c. flour
½ t. baking soda
1 t. salt
1 ½ c. oatmeal
date filling
Cream shortening and
sugar. Sift together flour, soda, and
salt, add to cream mixture, mix well.
Add oats and mix till well blended.
Turn half of the mixture into a greased 13x9 pan. Press and flatten with fingers to cover
bottom. Spread with date filling. Cover with remaining crumb mixture. Bake 400 degrees 25-30 minutes. Cool and cut.
Date Filling
2 c. pitted dates, chopped
2/3 c. sugar
2/3 c. water
1 t. salt
1 t. lemon juice
2 T. butter
Combine all
ingredients. Cook over low heat until
thick. Stir frequently. About 15 minutes.
