Date Oatmeal Squares

 

¾ c. shortening

1c. brown sugar

1 ¾ c. flour

½ t. baking soda

1 t. salt

1 ½ c. oatmeal

Cream shortening and sugar.  Sift together flour, soda, and salt, add to cream mixture, mix well.  Add oats and mix till well blended.  Turn half of the mixture into a greased 13x9 pan.  Press and flatten with fingers to cover bottom.  Spread with date filling.  Cover with remaining crumb mixture.  Bake 400 degrees 25-30 minutes.  Cool and cut.

 

Date Filling

 

2 c. pitted dates, chopped

2/3 c. sugar

2/3 c. water

1 t. salt

1 t. lemon juice

2 T. butter

 

Combine all ingredients.  Cook over low heat until thick.  Stir frequently.  About 15 minutes.
