Pecan Crescents

 

1 c. butter or margarine,soft

½ c. confectioners sugar

2 t. vanilla

1 c. pecans, finely chopped

1 ¾ c. flour

confectioners sugar for decorating

 

In a large bowl, beat butter, sugar, and vanilla with electric mixer until fluffy.  Add pecans and mix until blended.  With mixer on low, gradually beat in flour just until blended.  Wrap dough.  Chill one hour.  Heat over 300.  Divide dough in 8 equal pieces.  On lightly floured board, roll each piece into a 12 ¾ inch long rope.  Cut each piece into  8 pieces, then shape into crescents.  Bake 18-20 minutes or until golden.  While warm, roll in confectioners sugar.  Cool.  Store airtight up to 2 weeks.
