Wolfermans Nut Cookies

 

Makes 8 dozen

 

7 c. brown sugar

2 ½ c. shortening

½ c. butter

1 c. whole eggs (5 large)

3 t. salt

1 ½ t. ground cinnamon

2 c. chopped pecans

1 ½ T. baking powder

1 t. baking soda

10 c. flour

1 T. butter flavor extract

 

Place brown sugar, shortening and butter in a large mixing bowl, beat with an electric mixer until very creamy.  Add remaining ingredients in order listed.  Shape into rolls with a 2-inch diameter.  Wrap in plastic wrap or wax paper and chill several hours.  Preheat oven to 350 degrees.  Slice cookie rolls about ¼-inch thick.  Place on baking sheets and bake 8-10 minutes.
