Apple Cake

 

2 c. flour

1 t. baking soda

½ t. salt

1 t. cinnamon

1 ½ c. sugar

6 medium golden delicious apples

1 c. corn oil

3 eggs

½ c. sliced blanched almonds

 

Oil and flour a 9 by 9 cake pan.  In a large bowl, stir together flour, soda, salt, cinnamon, stir in sugar.  Pare apples and core, cut each into 8 equal wedges.  In the center of the flour mixture, make a well and pour the oil and drop the eggs in it. Beat until smooth.  Fold in apples and almonds (there will seem to be a small amount of batter compared with apples) Turn into the prepared pan.  Bake in preheated 325 degree oven until a cake tester inserted in the center comes out clean, and the apples are tender, about 1 ¼ hours.  Place pan on a wire rack to cool partly, while still warm cut cake into squares and remove with a wide spatula to dessert plates.  Serve at once, pass the whipped cream.
