Applesauce Cake

 

½ c. butter

¾ c. sugar

¾ c. brown sugar

1 egg

2 c. flour

2 t. baking powder

1 t. baking soda

1 t. cinnamon

½ t. ground cloves

1 ½ c. applesauce

1 c. raisins

½ c. chopped walnuts or pecans

Cream Cheese frosting

 

In a large mixing bowl, beat the butter for 30 seconds.  Add the sugars and egg, beat until combined.  Stir together the flour, baking powder, soda, and spices.  Add flour mixture alternately with applesauce to butter mixture.  Stir in raisins and nuts.  Turn batter into a greased 13 by 9 pan.  Bake 350 degrees for 30-35 minutes.  Cool in pan on wire rack. 

Cream Cheese Frosting

 

Beat 2-3 oz packages cream cheese (softened), ½ cup butter and 2 teaspoons vanilla until fluffy.  Gradually beat in 2 cups of powdered sugar. Beat in 2 ½ to 2 ¾ cups powdered sugar to make a spreadable frosting.
