Chunky Apple Cake

 

1 large apple

3 c. flour

2 c. sugar

1 c. oil

1/3 c. orange juice

1 t. baking soda

1 t. cinnamon

1 t. vanilla

¼ t. salt

3 eggs

1 ½ c. walnuts, chopped

1 3 ½ or 4 oz can flaked coconut

 

Grease and flour 10 inch tube pan.  Peel and dice apple.  Preheat oven 350 degrees.  In large bowl, with mixer at low speed, beat flour and next 8 ingredients just until blended, constantly scraping bowl, with rubber spatula.  Increase speed to high, beat 2 minutes, scraping bowl.  With spoon, stir in diced apple, 1 cup walnuts, and half of the coconuts.  Spoon batter into pan.  Arrange remaining walnuts and coconut on tip of cake.  Bake 25 minutes, then cover cake with a tent of foil, bake 1 hour longer.  Cool cake in pan on wire rack for 10 minutes.  Remove cake from pan, let cool completely.
