1 ¼ c. flour
½ c. sugar
½ c. butter
2 t. baking powder
1 egg
Pour flour into mixing bowl. Cut butter into sine pieces and add to flour along with
sugar. Mix with hands and knead until
mixture resembles cookie dough.
Sprinkle flour onto clean table top and roll dough to fit a 12 inch pie
pan. Grease pan and add dough to cover
bottom, and up sides of pan. Dough will
fall apart but it can be pieced together.
Cheese Filling
2 eggs, separated
1 pound cream cheese, room temperature
¾ c. sugar
½ c. flour
½ c. milk
3 ½ T. butter
1 t. vanilla
Beat egg yolks with sugar until lemon colored. Add melted butter to yolk mixture with
vanilla. Beat well. Add flour, milk, and cheese and beat
again. Add stiffly beaten egg whites
and beat until thoroughly mixed and mixture resembles cake batter. Spread evenly over crust. Place in cold oven and bake 50 minutes in
425 degree oven. Remove from oven and
turn upside down on wire rack to cool.
This step imprints a pattern on top of cake.
