Mystery Pecan Pie

 

1 8 ounce cream cheese, soft

1/3 c. sugar

1 t. vanilla

1/8 t. salt

1 egg

1 unbaked 9 inch pie shell

1 ¼ c. chopped pecans

2 slightly beaten eggs

2/3 c. light corn syrup

¼ c. sugar

1 t. vanilla

 

In a medium mixing bowl, combine cream cheese, 1/3 c. sugar, 1 t. vanilla and the salt.  Beat with an electric mixer till mixture is smooth.  Add the 1 egg and beat on low speed till mixture is combined.  Spread mixture over bottom of the unbaked pie shell.  Sprinkle pecans evenly over cream-cheese mixture.  In a large bowl, combine 2 eggs, corn syrup, ¼ c. sugar and 1 t. vanilla.  Carefully pour over pecans in pie shell.  Bake in 375 degree oven for 40-45 minutes of till puffed and center appears nearly set when you shake it.  Cool completely on wire rack.  Makes 8 servings.
