Bacon and Double Cheese Quiche

 

Unbaked pie crust

10 strips bacon

4 large eggs

1 ½ c. light cream

¼ t. thyme

1/8 t. white pepper

½ c. shredded gruyere cheese

½ c. shredded white cheddar

 

Preheat oven 375 degrees.  Bake pie shell, 15 minutes.  Prepare filling.  Cook bacon over medium heat until crisp.  Transfer to paper towel to drain.  In a small bowl, whisk together the eggs, cream, thyme, and pepper.  Pour into crust.  Crumble bacon.  Sprinkle the egg mixture with the bacon, cheese.  Bake until golden and custard is set, about 30 minutes.
