Best Quick Pancakes

 

1 c. flour

2 t. baking powder

½ t. salt

2 T. sugar

1 large egg, beaten

1 c. milk

2 T. margarine, melted

 

Heat griddle to 375 degrees or griddle pan over medium high heat.  Whisk flour, baking powder, salt and sugar in bowl.  Add egg, milk, and melted margarine.  Batter should have small lumps.  Coat griddle with butter or margarine.  Measure a ¼ c. of batter and pour onto griddle.  When pancakes have bubbles on top and are slightly dry around the edges, flip over.
