Broiled Shrimp with Garlic Sauce

 

1 pound fresh or frozen shrimp

¼ c. butter

¼ c. oil

1 T. lemon juice

pepper

¼ c. shallots, chopped

2 cloves garlic, minced

½ t. salt

¼ c. fresh parsley, chopped

 

Shell shrimp.  Rinse and dry.  Preheat broiler.  Melt butter in a shallow broiler pan, don’t let it brown.  Stir in oil, lemon juice, shallots, garlic, salt and pepper.  Add shrimp and turn until shrimp is well coated.  Broil 3 inches from heat about 5 minutes, turn and broil another 5 minutes.  Transfer to serving dish and pour sauce over it.
