Dry Marinades

For lamb, beef and chicken:

2 t. rosemary

2 large cloves garlic, minced

1 ½ t. salt

1 t. pepper

finely grated zest of 1 lemon

For Pork:

2 t. thyme

1 t. sage

2 t. salt

1 t. pepper

2 garlic cloves, minced

In a small bowl, stir together the ingredients. Each recipe makes enough for 4-5 pounds lamb, beef, chicken, or pork.
