Sausage Peppers and Potatoes

 

1 T. oil

1 pound italian sausage

2 large green peppers, cut into 1 inch strips

1 pound potatoes, peeled and diced (about 3 cups)

1 envelope lipton onion soup mix

1 ½ c. water

 

In a large skillet over medium high heat, heat oil and brown sausage.  Remove sausage.  Cut sausage into 1 inch chunks and set aside.  Add peppers to skillet and cook, stirring frequently, for 2 minutes.  Add potatoes on onion soup mix that has been blended with water.  Bring to a boil over high heat.  Reduce heat to low, and simmer covered 10 minutes.  Return sausage to skillet and simmer covered an additional  5 minutes or until sausage is done and potatoes are tender.  Serve with crusty italian bread.
