Shrimp Shell Salad

 

8 oz. shell macaroni

1 c. parsley sprigs

½ c. lemon mayonnaise(recipe follows)

3 large ribs of celery, chopped

½ small onion,chopped

1 pound shrimp, cleaned, deveined and cooked

dash of pepper

 

Cook macaroni according to package directions. Drain and rinse with cold water.  Prepare Lemon mayonnaise and shrimp.  Chop parsley.  Mix parsley and ¼ c. of the lemon mayonnaise into macaroni.  Chop shrimp. Mix shrimp, onion, celery and the remaining ¼ cup of the lemon mayonnaise.  Add macaroni. May garnish with additional shrimp, tomato, and lettuce.

 

Lemon Mayonnaise

1 egg

1 T. vinegar

1 T. lemon juice

½ t. salt

½ t. dry mustard

1 c. vegetable oil

 

In bowl, with electric mixer combine all ingredients and only ¼ cup of the vegetable oil.  Blend on low speed.  Leaving mixer on, slowly pour in remaining ¾ cup vegetable oil.
