Spinach and Mushroom Quiche

4 eggs, beaten

1 ½ c. light cream

¼ t. nutmeg

½ t. salt

½ t. pepper

1 package frozen chopped spinach, thawed and drained well

2 c. fresh mushrooms

½ c. chopped onions

1 c. shredded swiss cheese

1 c. shredded cheddar cheese

1 9-inch deep dish pie crust

Preheat oven to 400 degrees. In a large bowl, whip together eggs, cream, nutmeg, salt and pepper. Stir in spinach, mushrooms, onions, ¾ c. swiss cheese, and ¾ c. cheddar cheese. Transfer to pie crust. Top with remaining cheese. Bake uncovered 35 minutes or until bubbly and lightly browned.
