Bread Salad

 

1/3 pound sourdough bread torn into chunks

8 c. mixed greens

3 large tomatoes, cut into chunks

1 cucumber, seeded, cut into chunks

¾ c. thinly sliced red onions

1 package feta cheese (basil and tomato)

1/3 c. ripe olives, cut in half

1/8 c. italian salad dressing

 

Place bread chunks in bottom of salad bowl.  Top with greens.  Toss tomatoes, cucumber, onion, cheese and olives.  Place over greens.  Refrigerate.  Pour dressing over salad just before serving, toss lightly.  6-8 servings
