Tomato Parsley

 

8 firm tomatoes, peeled

¼ c. chopped parsley

1 clove garlic, crushed

1 t. salt

¼ t. pepper

¼ c. oil

2 T. vinegar

1 t. mustard

 

Slice tomatoes into ½ inch slices.  Combine the remaining ingredients in a small jar.  Shake well, pour over tomatoes.  Cover tightly, let stand 20 minutes before serving.
