Creamy Mashed Potato Casserole

 

6 potatoes, cubed and cooked until fork tender

¼ c. milk

1 package (8 oz) regular or lowfat cream cheese

1 c. regular or lowfat sour cream

1 t. parsley flakes

½ t. crushed garlic

½ c. shredded cheddar

 

Place all ingredients, except cheese, in a large mixing bowl.  With an electric mixer, blend ingredients until smooth on medium high speed.  Spoon mixture into a lightly greased 12x8 casserole dish.  Cover and bake in a 325 degree oven for 30-40 minutes.  Remove from oven.  Uncover, sprinkle with cheese.  Bake additional 5-10 minutes or until cheese is melted.
