Onion Rings

2 large onions

2 ¼ c. flour

1 ¼ t. baking powder

1 t. salt

1 ¼ c. buttermilk

4 ½ t. oil

2 eggs, separated

2 quarts oil, for frying

 

Cut onion into ½” thick slices.  Separate.  Place 1 cup of flour in a plastic bag.  Add onions to bag and shake until onions are coated.  In a medium bowl, combine the remaining ingredients.  Beat egg whites until soft peaks and fold into batter.  Dip onions into batter and fry until golden brown.  Drain on paper towel.  May keep warm in oven until all of the onions are fried.
