Potato and Pepper Packets

 

1 ½ pounds potatoes, scrubbed and cut into ½” cubes (about 3 cups)

1 each, medium size yellow and green bell pepper, cut into ½” pieces

½ c. chopped onion

1/3 c. fresh basil leaves, torn into small pieces (or 1 t. dry basil)

¼ c. margarine, melted

½ t. salt

½ t. pepper

 

Mix all ingredients in a large bowl until evenly coated with the melted butter.  Put an 8-inch square of heavy-duty foil on counter.  Put potato mixture in center of foil.  Make a double fold down the center and on the sides.  Heat oven to 450 degrees.  Place foil packets on cookie sheet and 35-40 minutes or until potatoes are tender, shaking packets three times and turning once.

 

To grill: place packets on grill, 4-6 inches from hot coals.   Grill 35-40 minutes, shaking packets three times, turning once.
