Roasted New Potatoes

1 pound small to medium new potatoes

¼ c. olive oil

1 ½ t. rosemary

3 garlic cloves, minced

salt and pepper

Preheat oven to 450 degrees. Oil a baking sheet or roasting pan. In a large bowl, toss the potatoes with the olive oil, rosemary, garlic, salt and pepper. Arrange the potatoes in a single layer on the prepared pan. Roast, stirring and turning occasionally until the potatoes are fork tender, about 45-55 minutes. Transfer to a serving dish.
