Sliced Baked Potatoes

 

4 medium potatoes

1 t. salt

2-3 T. melted butter

2-3 T. chopped fresh herbs (parsley, chives, thyme, sage or 2-3 t. dried herbs)

4 T. grated cheddar

1 ½ T. parmesan cheese

 

Peel potatoes if skins tough, otherwise just scrub and rinse them.  Cut potatoes into thin slices but not all the way through.  Use a handle of a spoon to prevent knife from cutting all the way.  Put potatoes in a baking dish.  Fan them slightly.  Sprinkle with salt and pepper and drizzle with butter.  Sprinkle with herbs.  Bake at 425 degrees 50 minutes.  Remove from oven-sprinkle with cheese.  Bake another 10-15 minutes.
